But – that article is from 4 years ago – surely that’s not the case today?  Sadly the comment from Ed Winters aka Earthling Ed, was posted on his Instagram feed today.  Along with it is a video, we’ll let you click on his website if you want to know more, it isn’t for the faint-hearted, or wilfully ignorant.


Shilpa Ravella

Shilpa Ravella.  If you haven’t heard of this doctor, you probably will soon.  She’s a gastroenterologist whose first book A Silent Fire was released in the States last month, here in Europe in January 2023.  

You can get a taste of her work from her blog, she’s a contributor at Forks Over Knives, which you can already find on our website and we’re expecting to add what looks like her very interesting book to the site early next year.

Smoky Coconut Crunch from The First Mess

Initially these were scattered over their delicious butternut squash rice noodle dish, we then found they work over several other dishes too… A tasty, sweet addition to risottos, curries, pasta dishes, whatever!

  • 2 cups coconut flakes 
  • 1 tablespoon oil (we used coconut)
  • 1 ½ tablespoons maple syrup (we used 1)
  • ½ tablespoon tamari (a vegan soy sauce)
  • 1 teaspoon smoked paprika
  • salt/pepper

Spread the flakes over a baking tray. Whisk together the oil, maple syrup, tamari, smoked paprika, salt and pepper. Pour the mixture over the coconut. Mix, trying to coat every piece as evenly as possible. Spread the coconut out into a single layer once more.  Bake for 25 minutes, stirring halfway. The coconut should be deep brown and crisp on the edges. It crisps completely as it cools.

How relaxing does this café look?  Clean air from all those plants, healthy smoothies and juices, as well as many home-made options.  

Leslie Terrance Plant Shop and Cafe was the perfect place to catch up with a dear friend who was recovering from a double mastectomy that she’d had the week before.  

Happy to see they’ve just confirmed they’re carrying on with their Late Night Café Club, until 9pm Thursday and Friday nights.  Local businesses thriving, way to go!
