An oldie (2015), but goodie. We had this (3 times) last week: Straight out of the oven, then with peas and broccoli added in, then as a side with a salmon fillet (for those in the family that still do).
So easy and there are no issues re-heating vegan dishes (another plus). Definitely one to make again.
