Welcome to The Thai Edit. 11 nights spent in this beautiful country, with its temples, beaches, culture and 71M people.


Street food is very much part of that culture. Fresh fruit is everywhere. Just a few juiced oranges here!


Prior to a wonderful Thai cookery class we went to a market to buy the spices we would use. Fascinating.

Mobile phones were in the hands of so many selling their wares on the streets.

Don’t start me off on the single use plastic!


With English as the second language it was easy to understand the menus. You buy and it’s cooked in front of you at the night markets.


Special moments up close and personal with this gentle creature. There are 4 elephants at this sanctuary. They roam freely in the surrounding mountains, coming back each morning to feed on the sugar cane they’re given. Beautiful to see.


A night in the jungle saw these monkeys doing what they do. I think they’re having a ball.


The students I stayed with would take these before a night out and again the next morning. No paracetamol to counteract hangovers here – vitamins and minerals are go.


Another hangover tonic here: Beetroot, mint, passion fruit, ginger. Delicious and oh so good for you.


It’s all about the journey… This one took us to the beautiful island of Koh Samui. Bliss for the soul.


Booked the night before, this 4 star, beachfront hotel was outstanding. £25pppn including breakfast. Wow.


£1.16 to ride pillion around the island. Got to love this place.


This however… Taken whilst very much in motion. Terrifying!


Different mode of transport here… What a special experience sailing through the Khao Sok National Park.


Back to the beach and some outstanding vegan food and fresh guava juice. According to Healthline guavas may: Help lower blood sugar – boost heart health – help relieve menstrual pain – help your digestive system – help weight loss – have an anticancer effect – help boost immunity – improve your skin. Delicious too.


City life next: This is a district in Bangkok where car parts are given a second life: furniture, sculpture, art. Fascinating.

Back to business. Don’t really know where to start with this one. A friend took these photographs in her work kitchen. As a lady who’s in remission from breast cancer these are her thoughts: ‘Full of sugar… and we know what THAT leads to … never mind the chemicals and additives!!’ Thank you Helen.


Look at all those additives! If the doctor below has anything to do with it they’ll be a thing of the past…
